How To Shuck Live Abalone (For Sashimi)

 

Step 1

Rub the abalone and rinse with fresh water. With salt, meat could be more crunchy.

No need to tenderize their meat.

 

Step 2

Placing the shell side down, slide a thin metal spoon from the shallow, narrow end of the shell to separate the meat from the shell. (Be careful when using a knife, it will be very slippery)

Step 3

Using a small knife, separate the organs from the foot of the abalone.

Step 4

Cut off the mouth in a triangular shape. Wash the meat clean and wipe off excess water.
